A heat source is applied to the pans, and water is evaporated from the maple sap. Maple sap concentrated to maple syrup on these units and bottled. Often, a near-syrup product is removed from the evaporator and finished on other equipment. This maintains a higher output of the main evaporator unit. Due to the high energy demands of maple, the evaporator pans are being changed and tested for better efficiency every year. Various sap pre-heaters and economizers are being used with the evaporators so that fuel is not being used to heat cold sap. More efficient burning of fuel in the evaporator is also being sought. Evaporators must be attended to at all times when in operation—often 24 hours a day.
