| This is not a new process, but it is relatively new to the maple industry. A near-syrup product is removed from the vapor compression distiller and finished on other equipment. This process involves taking the energy from the evaporated steam and using it as a heat source for energy to evaporate the incoming sap . In short, it recycles the energy. Energy input is very small for the vapor compression distiller, but investment costs are very high and it is only feasible for large maple operations. The vapor compression distiller will operate unattended once it is set into operation, and only needs to be attended to when it runs out of sap. | |||||
