MAPLE ON SNOW “LEATHER APRONS”

Heat desired amount of maple syrup to a temperature of 25-30°F above the boiling point of water. Without stirring, pour immediately onto snow. Use of clean, natural snow is customary but out-of-season shaved ice does do well to pour the syrup on. Serve with plastic forks to wind the “Leather Aprons” on and a good supply of unsweetened donuts and sour pickles. A gallon will generally serve about 60 people when used in this fashion for your maple-on-snow party.

 

Helpful Baking Information

Maple syrup may be substituted for granulated sugar in any recipe. Use 1 1/2 cups syrup for each 1 cup granulated sugar. Add 1/4 tsp. baking soda for each cup maple syrup used in substitution.

When maple syrup is used for all the sugar in a recipe, cut down the liquid by 1/2.

Baked goods made with maple syrup should be baked at 25°F lower temperature than same recipe using granulated sugar.
