While maple syrup is delicious by itself its flavor enhances the taste of many other foods. In addition to waffles and pancakes try it on ice cream or drizzle it on a bowl of mixed fruits. In addition to the recipes we will share with you on this page maple syrup can be substituted for sugar in many recipes. The following formula for this substitution is taken from "Make It With Maple", Extension Bulletin E-1181 published by the Cooperative Extension Service at Michigan State University.

"When substituting, use 1-1/2 cups of pure maple syrup for each cup of granulated sugar and add 1/4 teaspoon baking soda for each cup of maple syrup used. When maple syrup is substituted for all sugar in a recipe, reduce the amount of liquid used by one half, If maple syrup is substituted for half the sugar, reduce liquid amounts by one-fourth."

Here are two easy to make but delicious recipes:

Ham Loaf

pounds ground ham

pound fresh pork

cup bread crumbs

cup milk

eggs, beaten

Mix thoroughly and bake in a covered pan at 350 degrees F about one hour, basting at least four times with the following mixture:

cup maple syrup

teaspoon dry mustard

teaspoon ground cloves

cup water

cup vinegar

1/4

cup brown sugar

Maple Apple Crunch

8 to 10

graham crackers, crushed

1/2

cup butter or margarine

apples

1/2

cup maple syrup

Mix cracker crumbs and butter thoroughly. Slice apples. Butter a 1 quart baking dish and place apples in bottom of dish. Pour maple syrup over apples and add cracker and butter mixture. Bake at 325 degrees F for 25 minutes. Top with whipped cream or ice cream. Serves 6.
